If you’e new to sake, try this bottle.

The “45” refers to the rice-polishing ratio, representing the percentage of the rice remaining after milling. Here that means a clean-tasting, aromatic drink. Serve it cold, to heighten its crispness, with salmon, a salad, or (fine) a California roll.

Shiokawa Yamahai Junmai Ginjo Genshu

Do you like IPAs? If you answered: “Stupid question,” then you may love this stuff.

The brewery behind this potent sake is operated by just one guy. (Talk about a microbrewery.) And his umami-loaded brew is robust enough to stand up to a holiday roast, a burger, or even BBQ. You’ll notice all kinds of good-funk flavors: smoke, white pepper, and a little cocoa.

Yuho “Rhythm of the Centuries”

If you’re more of a whiskey fan, then this sake is for you.

The brewer employs a traditional, labor-intensive method using long poles to mix the yeast and the rice as it ferments, which leads to a smoother texture and a deeper flavor. Serve it at room temp to enjoy its nutty, earthy notes.

Fukucho Junmai SP06 “Seaside Sparkling”

If you like champagne, well they make sparkling sake too.

Seaside tastes like lemons and limes but also slightly of guava. You’d serve it chilled with fish and seafood; try it with lobster or raw oysters (highbrow) or a fried-fish sandwich (lowbrow).

Watari Bune “Junmai Ginjo 55”

And if you’re already a sake covert (or worked your way through the sake above and want to try even more), here’s the bottle for you.

It pours unassumingly: slightly cloudy and floral. But then you taste it and there’s a ripe melonlike sweetness, along with a creaminess and a mild funkiness. If you like alcohol with something going on, this has something going on.
